He himself recommends the Kinilaw (a typical Filipino dish using tuna, lime, kalamansi, coconut pulp, avocado cream and cherry tomatoes) and the Bomba de Pho (a croquette filled with beef cheeks cooked at low temperature with lime emulsion, sriracha and accompanied by a delicious reduction of Pho broth). At Hawker 45, they have the right and necessary respect for traditional dishes. Laila family have no problem taking Japanese Okonomiyaki salmon and adapting it completely, or inventing geniuses such as Laksa (a dish made up of "sweet rice with shrimp, fumet reduction, spices, squid, coconut cream and laksa inspired by the famous Singapore curry noodle soup").
